Is there any software yall would recommend for mega builds or statues

Hey guys, I just started a cobbleverse (200 modded) server and wanted to get into mega builds and pixel art. Is there any resources, apps, or websites you'd recommend me using? I've built some very basic houses back in 2014 but wanted to improve my builds even if it is using cut/paste software. Ideally, I'd like to build huge biblically accurate angels in the end (not that creative), and recreate the set in Cherry Blossom - Empires of the Sun.
