How to not get bored of minecraft?

So once a year, I have the infamous 2-week minecraft phase, but normally it lasts like 2 days, and I stop when I find diamonds or something because the nether is too scary. I just never know what to do after that. Do I need to just go straight to the nether or do I have to prepare? I want to beat the ender dragon but I don’t think I’ll be able to at this rate.
