I've used and abused villagers for over a decade and ever since the 1.14 update they've just been way too over powered. I still used them because it's the best way to get geared up but it always just felt too easy. I like that there's more of a grind to it now.
I know people are moaning that they don't want to put more time into setting up villagers now but nobody said you have to take advantage of them.
Minecraft is quite a grindy game. If you want loads of iron then you invest time into building an iron farm, if you want to build a mega base then you spend a bunch of time building farms and grinding resources, if you want am efficient wither skeleton farm then you have to spend time slabbing all around it. If you don't want to put time into these things then you don't have to, there's infinite other things you can do to have fun.
Minecraft has always been a grind if you want the best things. Why do people suddenly have a problem with that now?
