What blocks would you destroy if you want to make epic buildings

Hello there, im a bedrock player and im in the version 1.21.71 here i can destroy blocks using a bug with sea pickles, i want to update but also i want to destroy all umbreakable blocks for next buildings, I have already destroyed the nether roof, the end portal and all 20 gateways, so if you were in my position what would you destroy to build after?
