So lately I have been having trouble completing this advancement because I was missing 1 mob on my friends' vanilla server. After days of trying to figure out which Hostile mob I am missing, watching videos and scrolling on reddit, my friends and I finally figured it out. There wasn't an updated mob list info on the wiki until today so I am going to make a post anyway.
The most likely mobs you are missing on your list are as follows:
Boss mobs such as ender dragon and Wither have to be defeated in order to complete this advancement. Killing the Warden or other mobs that can behave "Hostile" but aren't on this list doesn't contribute to it's completion.
Here is a complete list, with hyperlinks to the Minecraft Wiki page.
Once again: Other mobs may be killed, but are ignored for this advancement!
You can track your progress if you are playing singleplayer by going to %appdata%/roaming/.minecraft/saves/world name/advancements
The same goes for multiplayer but you need the server owner to go into your specific player file in the advancements file on his server computer

The most likely mobs you are missing on your list are as follows:
- Zoglin, which is a Hoglin that transforms once transfered into the overworld.
- Zombie nautilus, this one was the last mob on my list, I couldn't find it anywhere so we spawned it through server commands. check out the wiki for info, I don't know anything about this mob nor have I ever seen it spawn somewhere...
- Creaking, recently added in the new Pale Oak biome.
- Endermite, sometimes spawns after using ender pearl to teleport.
- Breeze which spawns in trail chambers.
