Let me break it down for you.
The Enderman is a night mob.
All other night mobs have no direction in the world except to kill and destroy. So why is the Enderman different?
Once the Endermen have done nothing but destroy for ????? years, what's left is a desolate, lifeless shell of what once was. AKA "The End".
The Stronghold is not a portal through space, it's a portal through time.
A portal to the end.
Bonus theory: By "free the end", that means that you are freeing the end to happen, by opening a portal and allowing the Endermen to go back in time and start their process of destroying.
