I don't understand how models work?

I'm sorry, I'm really really new to this side of modding - I'm only used to modding and using resource packs from curseforge and such. I thought decoration models such as Nog's Plushies acted the same way as mods do but now I think I might be wrong and I would just like someone to explain it to me a bit simply if that's okay.
I was under the impression that I could just download something like Nog's Plushies and then download the dependencies (I've heard MythicCrucible, Oraxen, Nexo and ItemsAdder are supposed to be used, but I'm not familar with those either.) and then I would be able to load a survival world with other mods (such as essential, embeddium, etc.) and simply play. I assumed I would be able to just craft the items in the pack, or find them somehow? But based on the descriptions on the packs it seems like the models are for server-use only? Like, only for rewards or something on a server?
Apologises if this information is explained simply somewhere, but I couldn't find an explaination that made sense to me. Is there anyway to use models or mobs - mainly the ones from Nog's Menagerie - in a survival world like you would with other modded decorations and mobs? Or is it for server use only?

They Are Server use Only, you need plugins to run them like item-adder, you can also play on local server with plugins, you can watch the Video linked below :
- install plugins on single player world this will help you create a Minecraft server that It's a local

Hey there! Like reno said, u need a plugin like itemsadder, if u have a itemsadder file u can upload the contents map in ur itemsadder config and use /iazip, for a good tutorial, search "kasaisora itemsadder" on youtube, i hope this helped u. Have a good day
