When I was upgrading my version of IPS Suite I got the dreaded http error 500. The updater would just stop running and the log in the update folder was empty.
To fix this I disabled all plugins and third party applications, and also updated my PHP version. After doing that the update worked. After the update I re-enabled each plugin one at a time and found the one that was not working on the new version. And the version wasn't even that much of a jump, only a couple of updates.
Hoping this helps someone else who has this problem one day.
