How do people build those giant cities/bases in survival?

I've been playing minecraft since 1.12 I believe, and I've never been good at building. I always just sticked to either youtube tutorials or just a simple house. I've seen builds that are thousands of blocks in size, and all in survival. Spaceships, castles, entire cities, etc. How do people make those? I just don't know how to make a good looking house
