Can someone help a n00b mom trying to help her kids get a rainbow sheep on Switch

My kids just got into Minecraft.. they are kindergarten age. They play on creative mode and my son has a Minecraft encyclopedia.. he said if you name a sheep “Jeb” it will be rainbow. I have no clue how to go about this. I read something about an anvil? But I don’t even know what that is. Help!
