Minecraft's updates kind of follow a gradient from "Update released to finish an incomplete game" to "Update adding content to a game that's been done for a while." No shade to newer updates (I quite like them, caves & cliffs in particular), but it's clear that features like trial chambers or happy ghasts are adding features on top of an already finished experience compared to, like, version 1.1 adding spawn eggs or 1.3 adding villagers. At what version do you feel like the game's "complete", and there's nothing added by later updates that fill a void in the game's environment?
Personally, I'd draw the line at around 1.9. By that point you have wood variants, boats that are actually playable, and a combat system overhaul that adds some much needed complexity. The latest I'd go is 1.13, since oceans sorely needed mechanical relevance and getting through large bodies of water was a pain without swimming. 1.10 through 1.12 are firmly within the domain of "good but not necessary" for me, though, so it's a bit of a stretch.
